The French crème caramel, reborn with condensed milk and often a shot of coffee.

A small, wobbly caramel custard — the colonial-era French legacy that Vietnam made its own with sweetened condensed milk for richness. Often served with crushed ice and a drizzle of black coffee poured over the top (bánh flan cà phê), which cuts the sweetness beautifully. The country’s most popular Western-rooted dessert.

How to eat it well

  • Try it with the black-coffee drizzle (cà phê) version — the bitterness balances the caramel.
  • It is served cold, often over crushed ice; a perfect light end to a heavy meal.
  • Cheap and everywhere — market dessert stalls do a great one for under a dollar.

Where it’s best

Nationwide at chè and dessert stalls; the coffee version is especially good in the south.
