Turmeric-yellow noodles with just a splash of intense broth — central Vietnam’s signature.

Wide turmeric-stained rice noodles dressed with only a few spoonfuls of concentrated broth, topped with shrimp, pork, a quail egg, peanuts, and a shard of sesame rice cracker you crumble over the top. More a dressed-noodle dish than a soup. The pride of Quang Nam province around Da Nang and Hoi An.

How to eat it well

  • Crumble the rice cracker (bánh tráng) over the top and toss everything together.
  • It is meant to be barely-brothy — do not expect a soup, and do not ask for more liquid.
  • Best as a Da Nang / Hoi An lunch.

Where it’s best

Da Nang and the Quang Nam countryside, where it is a daily staple rather than a tourist dish.

Vegetarian & dietary

Often contains shrimp and pork; vegetarian (chay) versions exist in central Vietnam.
