Silky steamed rice sheets rolled around pork and mushroom — a northern breakfast.

A thin batter steamed into a delicate sheet on a cloth stretched over a pot, then rolled around minced pork and wood-ear mushroom, topped with crispy fried shallots and served with a fish-sauce dip and a slice of cinnamon pork sausage (chả). Soft, light, and traditionally a breakfast. Watching it made — the cook lifting gossamer sheets off the steamer — is half the pleasure.

How to eat it well

  • A breakfast and morning food; the best stalls are gone by mid-morning.
  • Dunk each roll in the warm fish-sauce dip; add a drop of the bottled cà cuống (water-bug essence) if offered, for the authentic note.
  • Order the chả (pork sausage) on the side — it is the standard partner.

Where it’s best

Hanoi and the north, where it is a daily breakfast rather than a novelty.

Vegetarian & dietary

Mushroom-only versions exist; the dip is fish-sauce based, so ask for a veg dip if needed.
